i got this tip from an employee at a local farm. it worked brilliantly.
1. cut off the very ends of the kale’s stems.
2. fill a big bowl or your sink with tepid water, not too hot and not too cold.
3. let the kale soak in the tepid water for about 15 minutes, swooshing the leaves around every now & then.
4. after they have soaked, prepare an ice bath & submerge the leaves in the cold water. again, swoosh the leaves around a bit.
5. pull kale out of the water & allow to air dry on kitchen towels before prepping & storing.
6. enjoy blanched & then stir fried with olive oil, garlic, shallots, & apple cider vinegar. also delicious with the addition of anchovies or bacon. nom.
awesome! i tried this the other day with some chard, but for some reason (laziness) i didn’t re-cut the stems first. next time, and it should work better!
