don’t look too hard at these photos because i’ve been super lazy about taking them, but some things i’ve made recently:

  1. quinoa with roasted sweet potato, acorn squash, and eggplant (loosely based on this)
  2. sweet potato blondies and chai-spiced chocolate chip shortbread (both from vegan cookies etc. etc.)
  3. chesapeake tempeh cakes (from vegan brunch)
  4. homemade pizza with spinach, mushrooms, olives, and grape tomatoes (and daiya to ruin the presentation)

okay, my real thanksgiving plate (blurry photo from hands trembling with anticipation, sorry): tofurky roast with vegan gravy, my apple-sage-sausage-chestnut stuffing (recipe here), andy’s green bean casserole (recipe here), roasted root veggies and butternut squash, fresh cranberry sauce.
i think i’m still full.
